Twice-Baked Potato Casserole
INGREDIENTS

  • Servings: 6 to 8
  • 6 medium unpeeled potatoes already baked
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 lb sliced bacon, cooked and crumbled
  • 3 cups (24 oz) sour cream
  • 2 cups (8 oz) shredded mozzarella cheese
  • 2 cups (8 oz) shredded cheddar cheese
  • 2 green onions chopped
DIRECTIONS
  1. Cut baked potatoes into 1-inch cubes. Place half in a greased 13 x 9x 2 baking dish. Sprinkle with half the salt, pepper, and bacon. Top with half the sour cream and cheeses. Repeat layers. Bake uncovered in a 350 degrees oven for 20 minutes or until cheese is melted. Sprinkle with onions. Yields 6-8 servings

I came across this recipe and tweaked it a lil to make it something my whole family would like. We just love traditional twice baked potatoes but I don't always have the time to make those.
