Tzatziki Shrimp Cucumber Rounds

- 1/4 c reduced-fat plain yogurt
- 2 tbsp finely-chopped, peeled cucumber
- 1/8 tsp garlic powder
- 1/8 tsp dill
- 6 bacon strips
- 24 uncooked, peeled and de-veined medium-size shrimp
- 1-1/2 tbsp olive oil
- 2 medium cucumbers cut into 1/4" slices - 24 total
- extra dill or fresh parsley (optional for garnish)
DIRECTIONS
- In small bowl, combine yogurt, chopped cucumber, garlic powder, and dill. Set aside.
- Cut each bacon strip in half width-wise and then again length-wise. Wrap a piece of bacon around each shrimp, securing with a toothpick.
- In large, non-stick skillet heat oil over medium heat. Cook shrimp in batches for 3-4 minutes each side until the bacon is crisp.
- Spoon a rounded 1/2 tsp yogurt mixture onto each cucumber slice. Top with 1 shrimp. Garnish with extra dill or fresh parsley if desired.
