UPSIDE-DOWN APPLE CAKE

INGREDIENTS
  • 1 cooking apple
  • 1/4 c. butter or margarine
  • 1/3 c. honey
  • 1/3 c. chopped nuts
  • 1/4 c. chopped maraschino cherries
  • 1 1/4 c. all-purpose flour
  • 3/4 c. sugar
  • 1/2 c. milk
  • 1/3 c. shortening
  • 1 egg
  • 1 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 1/2 tsp. salt
DIRECTIONS
  1. Core unpeeled apple. Slice into 1/8-inch thick rings; cover and set aside.
  2. Place butter in 9-inch microproof cake dish.
  3. Cook on High (maximum power) 1 1/2 minutes or until melted.
  4. Stir in honey.
  5. Add apple rings.
  6. Cook on High (maximum power) 4 minutes, turning apple rings after 2 minutes.
  7. Sprinkle with nuts and cherries; set aside.
  8. In small mixing bowl combine flour, sugar, milk, shortening, egg, baking powder, vanilla and salt.
  9. Beat 3 minutes, scraping bowl once.
  10. Carefully spoon batter over apple rings in cake dish.
  11. Cook on High (maximum power) 14 to 15 minutes, or until cake tests done, rotating dish if cake is rising unevenly.
  12. Invert onto serving plate.
  13. Let cake stand in dish 3 to 4 minutes.
  14. Remove dish and let cake stand 10 minutes.
  15. Serve warm.
