UPSIDE-DOWN APPLE CAKE

INGREDIENTS
- 1 cooking apple
- 1/4 c. butter or margarine
- 1/3 c. honey
- 1/3 c. chopped nuts
- 1/4 c. chopped maraschino cherries
- 1 1/4 c. all-purpose flour
- 3/4 c. sugar
- 1/2 c. milk
- 1/3 c. shortening
- 1 egg
- 1 1/2 tsp. baking powder
- 1 tsp. vanilla
- 1/2 tsp. salt
DIRECTIONS
- Core unpeeled apple. Slice into 1/8-inch thick rings; cover and set aside.
- Place butter in 9-inch microproof cake dish.
- Cook on High (maximum power) 1 1/2 minutes or until melted.
- Stir in honey.
- Add apple rings.
- Cook on High (maximum power) 4 minutes, turning apple rings after 2 minutes.
- Sprinkle with nuts and cherries; set aside.
- In small mixing bowl combine flour, sugar, milk, shortening, egg, baking powder, vanilla and salt.
- Beat 3 minutes, scraping bowl once.
- Carefully spoon batter over apple rings in cake dish.
- Cook on High (maximum power) 14 to 15 minutes, or until cake tests done, rotating dish if cake is rising unevenly.
- Invert onto serving plate.
- Let cake stand in dish 3 to 4 minutes.
- Remove dish and let cake stand 10 minutes.
- Serve warm.
