USO Chutney Chicken (my grandfather's favorite!)

  • Servings: 3-5
  • 1 3 lb. fryer cut into 6 pieces
  • flour for dusting (seasoned with salt and pepper)
  • 1/2 c. unsalted butter
  • 1 c. diced onions
  • 1 T. vinegar
  • 1 T. sugar
  • 3-4 T. chutney
  • 1/2 c. chicken broth
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Dust cleaned chicken with plenty of the flour mixture.
  3. Brown in butter.
  4. Place chicken in casserole and set aside.
  5. In a skillet, simmer all other ingredients for 15 minutes, pour over chicken.
  6. Bake uncovered for one hour.
