USO Chutney Chicken (my grandfather's favorite!)
INGREDIENTS
- Servings: 3-5
- 1 3 lb. fryer cut into 6 pieces
- flour for dusting (seasoned with salt and pepper)
- 1/2 c. unsalted butter
- 1 c. diced onions
- 1 T. vinegar
- 1 T. sugar
- 3-4 T. chutney
- 1/2 c. chicken broth
DIRECTIONS
- Preheat oven to 350 degrees.
- Dust cleaned chicken with plenty of the flour mixture.
- Brown in butter.
- Place chicken in casserole and set aside.
- In a skillet, simmer all other ingredients for 15 minutes, pour over chicken.
- Bake uncovered for one hour.
