Uncle Don's favorite lemon pie

  • 9” graham cracker pie crust
  • 1/2 c + 1T cornstarch
  • 2 c sugar
  • 4 c milk
  • 5 egg yolks
  • 7 T meyer lemon juice
  • zest from one lemon
  • Heavy whipping cream
  • Powdered sugar for whipping cream (sweeten to taste)
  1. Make slurry by combining some milk and cornstarch together first or the cornstarch will be a lot harder to get smooth
  2. In a large saucepan, combine sugar, egg yolks, milk, and cornstarch slurry
  3. Heat gradually up to medium heat, until mixture is thick and bubbly
  4. Remove from heat, and add juice and zest
  5. Pour into graham cracker crust. Cool completely before serving,
  6. Serve with generous dollop of whipped cream
My great aunt was a wonderful baker, and this was her late son's favorite lemon pie. It reminds me of years of holiday potlucks at his house. I have made small changes to it to suit my taste, but I think he would still love it.
