Vanilla layerd cake

  • 160g butter, softened
  • 1 1/2 cups icing sugar mixture
  • 1 tablespoon milk
  • 1/4 cup lemon curd- at room temp so it is spreadable
  • 125g blueberries
  • 2 teaspoons lemon zest -(finely grated rind)
  1. Frosting
  2. Use an electric mixer on low speed to beat the butter until smooth then add icing sugar little by little until all mixed, then at milk and mix again
  3. Use a serrated knife to cut the cake in half horizontally so you have two layers. Place the cake base on a serving platter. Spread half or just under half the frosting on top and smooth oy out. Top with the lemon curd and half the blueberries then put the top layer on top.
  4. Spread the remaining icing on the top cake layer. Sprinkle with the remaining blueberries and lemon zest.
