Vegan Apple Breakfast Bars
INGREDIENTS

  • 2 Apples
  • 200g brown sugar
  • 180g wholemeal flour
  • 150g oats
  • 1tsp bicarbonate soda
  • 1tsp cinnamon
  • 2tbsp flax seeds
  • 50g raisins
  • 90ml oat milk
  • 300g oat yoghurt
  • 1tsp vanilla extract
DIRECTIONS
  1. Line a 34 x 24cm baking tin with greaseproof paper.
  2. mix together dry ingredients: flour, sugar, oats, flaxseeds, bicarbonate of soda, cinnamon and raisins
  3. Add the almond milk, yoghurt, vanilla and one chopped apple
  4. Mix well and pour into baking tin
  5. With your second apple, add slices of apple to the topping for a lovely finish
  6. Bake for 30 mins
  7. Let cool and slice up, ready for eating.
RECIPE BACKSTORY
These bars are very tasty and make for a healthy and filling snack when you're out on a walk. They keep well in a sealed container for 3-4 days or in the freezer for longer. Use a really sweet eating apple if you can.
