Vegan Banana Bread
INGREDIENTS
  • Cooking Time: 60 to 75
  • 1 1/2 cups flour -- whole wheat
  • 1/2 cup wheat bran
  • 1/2 cup wheat germ
  • 3/4 cup turbinado sugar (1/2 cup)
  • 4 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla
  • 3 bananas (very large bananas),mashed (processed in food processor)
  • 1 apple -- finely chopped
DIRECTIONS
  1. Combine all ingredients.
  2. Bake at 350F for 60-75 minutes in a greased and floured loaf pan, or until a toothpick inserted in the center comes out clean.
  3. Remove from pan and cool on its side.
RECIPE BACKSTORY
Made this into muffins and baked it at 375ºF for 20 min. It made 12 muffins. If you eat when they are just baked they taste dry but after some hours they get very moist and full of flavor. Great recipe, but you have to let it sit overnight.
