Vegan Banana Oat Bread
INGREDIENTS
- Dry:
- 1 cup white flour
- 1/2 cup wheat flour
- 2/3 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup oats
- Wet:
- 2 large, ripe bananas
- 1/4 cup oil
- 1 tsp vanilla extract
- 2 T ground flax seed
- 6 T pure water
- Soy milk, as needed
DIRECTIONS
- Pre-heat the oven to 350F.
- Measure out all the dry ingredients and place in a single bowl.
- In a separate bowl combine all the wet ingredients, except for the flax, water, and soy milk.
- In a small 3rd bowl combine the flax and water. Mix well and add to the wet ingredients.
- Add the wet ingredients to the dry ingredients. Add soy milk as needed to moisten batter.
- Portion 1/2 T into mini muffin cups.
- Bake for 20 minutes, or until golden brown, and holding shape. You may test with toothpick.
