Vegan Brownies

INGREDIENTS
  • 1 can black beans, rinsed and drained
  • 3 tablespoons veggie or coconut oil
  • 4 tablespoons cocoa
  • 1-teaspoon baking soda
  • 1-teaspoon vanilla
  • 1-cup organic sugar
  • 2 bananas make sure they aren't super ripe, all yellow no green. Personally I think they mix better if they are a few days older.
  • 1/4-cup applesauce
DIRECTIONS
  1. Preheat oven to 350 degrees. Blend all ingredients in a blender until smooth. Pour into a lightly greased 8×8 pan. Bake for 30 minutes or until a toothpick comes out clean. They are very cake like brownies and very yummy! You can also add in chocolate chips or nuts prior to putting it in the oven.
RECIPE BACKSTORY
I made these for a friend once who was staying with us. I originally got the recipe online which was okay, we ended up making it 3 or 4 times in the week she was here, tweaking the recipe a little each time. I still haven't told my husband what the secret ingredient is; he would never eat them if he knew!
