Vegan Pancakes
  • 1 cup all purpose flour
  • 1 tbsp sugar
  • 1 tsp baking soda
  • a pinch of salt
  • 1 cup soy milk
  • 1 tbsp veg. oil
  • 1 tsp vanilla extract
  1. Combine dry ingredients in a bowl
  2. In a separate bowl, combine the soy milk, oil and vanilla.
  3. Then add to dry mixture.
  4. Don't over mix the batter though, a couple of lumps are ok.
  5. Cook on preheated, lightly oiled pan.
  6. Turn when bubbles form on surface and edges begin to dry.
Tip - I use a lightly greased 1/3 cup to pour the batter into the pan as it keeps them all a similar size. I like to cover my pancakes with maple syrup and eat with blueberries.
