Vegan Pancakes

INGREDIENTS
- 1 cup all purpose flour
- 1 tbsp sugar
- 1 tsp baking soda
- a pinch of salt
- 1 cup soy milk
- 1 tbsp veg. oil
- 1 tsp vanilla extract
DIRECTIONS
- Combine dry ingredients in a bowl
- In a separate bowl, combine the soy milk, oil and vanilla.
- Then add to dry mixture.
- Don't over mix the batter though, a couple of lumps are ok.
- Cook on preheated, lightly oiled pan.
- Turn when bubbles form on surface and edges begin to dry.
