Vegetable Baked Brie

  • 8 oz wheel of Brie
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup diced red pepper
  • 1 Tbs olive oil
  • 1/2 tsp chopped garlic
  • Ritz crackers
  • I added some dried thyme
  1. Split the Brie in 1/2 making 2 rounds.
  2. Saute the onion in the oil for about 2 minutes. Add the zucchini and red pepperand garlic and saute till vegtables are tender.
  3. I added some dried thyme to this mixture.
  4. Spoon the sauted vegtables over the brie 1/2 then top with the remaining Brie half.
  5. Bake at 375 for 15-18 minutes or until the cheese melts.
  6. Serve with the crackers.
  7. Serves 12~
  8. Personally I think that this will serve 6-8
