Vegetable Beef Soup

INGREDIENTS
  • 1 to 2 pkgs stew meat, cut in 1/2 inch cubes
  • 1 c. sliced celery
  • 1 c. sliced carrots
  • 4 potatoes, cut
  • 1 (16 oz) can stewed tomatoes
  • 1 (16 oz) can tomato sauce
  • 1 envelope Lipton Onion Soup
  • 1/2 tsp. garlic powder
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. shortening
  • 2 Tbsp. cornstarch
  • 4 1/2 c. water
DIRECTIONS
  1. Brown meat in a large pan using shortening; add onion soup, garlic powder, salt and pepper. When browned, add 4 cups water and vegetables. Vegetables should be covered with water. Simmer 2 to 3 hours. Before serving, mix 1/2 cup water and cornstarch and dissolve cornstarch. Bring soup to boil; add cornstarch mixture, stirring rapidly to prevent lumps. Serve with baking powder biscuits or cornbread.
