Vegetable Packed Tortilla Soup

  • 4 cups vegetable broth
  • 3-4 tomatoes
  • 2 carrots
  • 2 celery stalks
  • About 1/2 red pepper
  • About 1/4 red onion
  • 1 garlic clove
  • Salt and pepper to taste
  • Dash cumin
  • Dash cyan pepper (if you like a little spice)
  • 16 oz canned corn
  • 1 cup cooked brown rice
  • Chopped olives
  • Chopped avocado
  • Baked corn chips
DIRECTIONS
  1. In to a blender add: broth, tomatoes, carrots, celery, red pepper, onion, garlic and spices. Blend on high until well incorporated.
  2. Add in corn and rice and give it a few pulses.
  3. Pour mixture into a large pot and bring to a boil and then let simmer.
  4. Add in some shredded chicken if desired or just leave as is for a delicious meat free soup.
  5. Garnish with olives, avocado and corn chips if desired.
