Vegetable Pasta Soup

  • 2 c chopped onion
  • 2 tbsp olive oil
  • 1 c diced carrot
  • 1 c minced celery
  • 1 tsp salt
  • 1 tsp oregano
  • 1/4 tsp pepper
  • 1 tbsp basil
  • 1 c cubed zucchini
  • 2 16 oz cons tomatoes
  • 3 c water
  • 1 16 oz can great northern beans, drained
  • 3/4 c uncooked pasta
  • 1/4 c chopped fresh parsley
DIRECTIONS
  1. in soup kettle, saute onions in olive oil until they are soft, about 5 min
  2. add carrot, celery, salt, oregano, pepper, and basil; cover and cook over low heat for 30 min
  3. heat soup to a boil
  4. add pasta and boil until tender, about 10 min
  5. stir in parsley and serve
