Vegetable Pasta Soup

  • 2 cup chopped onion
  • 2 tbsp olive oil
  • 1 cup diced carrot
  • 1 cup minced celery
  • 1 tsp salt
  • 1 tsp oregano
  • 1/4 tsp pepper
  • 1 tsp basil
  • 1 cup cubed zucchini
  • 2 16 oz cans tomatoes
  • 1/4 cup uncooked pasta
  • 1/4 cup chopped fresh parsley
DIRECTIONS
  1. 1. in a soup kettle, saute onions in olive oil until they are soft, about 5 mins.
  2. 2. Add carrot, celery, salt, oregano, pepper, and basil. Cover and cook over low heat for 5 minutes.
  3. 3. Stir in zucchini, tomatoes, water, and beans. Cover and simmer gently for 30 mins.
  4. 4. Heat soup to a boil.
  5. 5.Add pasta and boil until tender, about 10 minutes.
  6. 6.Stir in Parsley and serve.
