Vegetable Pasta Soup

  • 2 cups chopped onion
  • 2 Tablespoons olive oil
  • 1 cup diced carrot
  • 1 cup minced celery
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1 teaspoon basil
  • 1 cup cubed zucchini
  • 2 16 oz. cans tomatoes
  • 3 cup water
  • 1 16 oz. can great northern beans, drained
  • 3/4 cup uncooked pasta
  • 1/4 cup chopped fresh parsley
DIRECTIONS
  1. 1. In a soup kettle, saute onions in olive oil until they are soft, about 5 minutes.
  2. 2. Add carrot, celery, salt, oregano, pepper, and basil. Cover and cook over low heat for 5 minutes.
  3. 3. Stir in zucchini, tomatoes, water, and beans. Cover and simmer gently for 30 minutes.
  4. 4. Heat soup in a boil.
  5. 5. Add pasta and boil until tender, about 10 minutes.
  6. 6. Stir in parsley and serve.
RECIPE BACKSTORY
This recipe is very good especially for vegetarians because there is no mean in it. Its also good for when you need to walk away from the stove and go do something else because it needs to cook for longer.
