Vegetable Pulav

INGREDIENTS
  • Chopped vegetables (you can include carrots, beans, cauliflower) about 1 cup
  • Boiled Peas (1/3 cup)
  • Clarified Butter/Ghee
  • Oil
  • Sliced Onions (2 numbers)
  • Bay Leaf (1 number)
  • Cardamom (2-3 numbers)
  • Black peppercorns (3-4 numbers)
  • Cloves (3-4 numbers)
  • Salt to taste
  • Boiled rice (1 cup)
DIRECTIONS
  1. 1. Sauté chopped veggies (carrots, beans & cauliflower ) and peas in oil and keep aside to be added to rice later
  2. 2. Heat generous amount of ghee in a pan
  3. 3. Add thin sliced onions and sauté until they turn golden brown
  4. 4. Add whole spices including bay leaf, cardamom, star anise, black peppercorns, cloves and fry until they become fragrant
  5. 5. Add salt and sautéed veggies and mix well
  6. 6. Add boiled rice ( I have used brown rice here) and mix gently
  7. 7. Enjoy vegetable pulav with your favourite raita
RECIPE BACKSTORY
On a lazy day, when you don’t want to make too many things this is the dish to go for!! It is not as cumbersome as making a biryani but super tasty!! And the best part is you don’t need any sides, it makes up the complete dish!! If you like you can enjoy it with your favorite raita or just plain curd. --Chaitra D. --Pune, India
