Vegetarian Spinach Pie

  • 10 ounce package frozen cut spinach, thawed and drained
  • 1 egg
  • 4 ounces cream cheese
  • 1/4 cup finely chopped or shredded onion
  • 1/4 teaspoon salt
  • 4 ounces thinly sliced Swiss cheese
  • 4 ounces whole walnuts, roasted until lightly browned
  • 1 package crescent roll dough
  • 3 ounces butter or margarine
  1. Drain the spinach by cutting a slit in on corner and squeezing out the liquid. Roast the walnuts at 350 degrees for ten minutes on a piece of aluminum foil. Put the cream cheese in a 2 quart glass bowl along with the chopped onion, cover it and microwave until warm, about one minute. Add to the spinach, salt, and egg, mixing well. Melt half of the butter in a flat casserole dish and spread the dough out on top, on one big square. Cover with the remaining butter. Spread the spinach mixture on top and sprinkle the walnuts evenly over it. Place the cheese slices evenly over the walnuts. Bake at 350 degrees for 20 minutes or until the dough is browned.
This has a bit of tasty crunchiness and enough richness to satisfy an appetite for a main dish on a wintry night.
