Veggie Bean Burritos

  • 1 Small onion
  • 1 Chopped jalapeno
  • 1/2 Tablespoon chili powder
  • 1-14 Ounce can crushed tomatoes
  • 1 Cup water
  • 1 Small onion
  • 2 1/2 Cups chopped bell pepper, corn, mushrooms and zucchini
  • 2 Cans black beans
  • 1/2 Cup water
  • 1 Teaspoon chili powder
  • 1/2 Teaspoon cumin
  • 8 Big tortillas
DIRECTIONS
  1. To make sauce: sauté onion and garlic and 1/4 cup water or olive oil 5 minutes. Add chilies and spices, stir and sauté a few minutes. Add remaining sauce ingredients, mix well and simmer about 15 minutes. Set aside. To make filling: sauté onion, green pepper, mushrooms in water for 5 minutes. Add other ingredients and sauté 10 more minutes. Fill tortillas and cover in sauce and cheese. Bake 15 minutes at 350 degrees F.
