Veggie Tofu Burger

  • 1/2 Block Extra Firm Tofu
  • 1 1/2 Cups Broccoli
  • 1 1/2 Cup Sliced Mushrooms
  • 2 whole or 4 halves - Sundried Tomatoes from oil (I used Good and Gather brand from Target)
  • 1/2 Cup Nutritional Yeast
  • 2 TBSP Minced Garlic
  • 1/2 Onion chopped
  • 2 TBSP Liquid Aminos
  • 1/2 Cup Corn Starch
  1. Using a food processor or blender: pulse together tofu, broccoli, mushrooms, garlic, onion, nutritional yeast, liquid aminos and sun dried tomatoes - just until finely chopped.
  2. Pour into a bowl and mix in corn starch and form into patties.
  3. Preheat skillet on medium heat with your choice of oil or butter. I use avocado oil or vegan butter.
  4. Cook for about 1/2-2 minutes on each side. I flattened them a bit in the pan so they cook all the way through and do not fall apart as easily.
  5. Serve them up with your choice of bun and condiments. I used black bean hummus and vegan feta cheese.
I love veggie burgers, but the basic black bean burger can get boring and messy. I try to change up the ingredients in mine to keep it interesting and healthy.
