Waldorf Chicken Salad

INGREDIENTS
  • 4 boneless skinless chicken breasts
  • 1 large red apple, diced but not peeled
  • 1/2 cup chopped walnuts
  • 1 cup celery chopped
  • 1 cup seedless red grapes halved
  • mayo
  • salt and pepper to taste
  • curry powder to taste
DIRECTIONS
  1. Cook chicken breasts until tender. Cool and dice. In a large bowl, combine all ingredients with enough mayo to moisten. Serve on a bed of lettuce or as a sandwich.
