Waldorf Chicken Salad

INGREDIENTS
- 4 boneless skinless chicken breasts
- 1 large red apple, diced but not peeled
- 1/2 cup chopped walnuts
- 1 cup celery chopped
- 1 cup seedless red grapes halved
- mayo
- salt and pepper to taste
- curry powder to taste
DIRECTIONS
- Cook chicken breasts until tender. Cool and dice. In a large bowl, combine all ingredients with enough mayo to moisten. Serve on a bed of lettuce or as a sandwich.
