Walnut Brown Sugar Squares

  • 1/2 cup plus 2 tbsp flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup firmly packed light brown sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla
  • 1 cup chopped walnuts
DIRECTIONS
  1. Preheat the oven to 350 F
  2. Lightly grease an 8 x 8 inch square baking pan
  3. In a small bowl, combine the flour, baking soda, and salt
  4. Set aside
  5. Using an electric mixer with a medium size bowl on medium speed, beat together the sugar, egg, and vanilla until creamy and smooth, about 2 minutes
  6. Add the dry ingredients
  7. Mix thoroughly
  8. Stir in the walnuts, reserving 2 teaspoons
  9. Transfer the batter to the prepared pan
  10. Using your hands, spread the batter evenly
  11. Sprinkle with the remaining 2 tablespoonfuls of the walnuts
  12. Bake for 25 minutes
  13. The center will not be set but do not overbake
  14. Cool to room temperature
  15. Cover tightly with plastic wrap and allow to set overnight before cutting and serving
