Warm German Potato Salad

  • 3 or 4 med red potatoes, peel can be left on, cut in half and slice into 1/4"
  • 4-6 slices bacon, diced
  • 1 med onion, diced
  • 2 Tbsp vinegar
  • 1/2 cup potato water, (reserve from boiling potatoes)
  • 2 Tbsp granulated sugar
  • 1 Tbsp flour
  • 1/4 tsp celery seed
  • 1 tsp salt (divided)
  • 1/4 tsp pepper
  1. Boil potatoes in water with half of the salt. Drain, and reserve potato water.
  2. Fry bacon until crisp. Remove bacon from grease and set aside.
  3. Add onion to bacon fat and saute until transparent. Stir in flour, celery seed and stir to combine. Stir in vinegar, sugar, and 1/2 cup of the reserved potato water and salt & pepper.
  4. Combine cooked potatoes, bacon and onion mixture.
  5. Serve warm. Can also serve cold.
I found this recipe years ago in the Vancouver Sun and it has been a hit every time I've made it. It never fails!
