Warm German Potato Salad

- 3 or 4 med red potatoes, peel can be left on, cut in half and slice into 1/4"
- 4-6 slices bacon, diced
- 1 med onion, diced
- 2 Tbsp vinegar
- 1/2 cup potato water, (reserve from boiling potatoes)
- 2 Tbsp granulated sugar
- 1 Tbsp flour
- 1/4 tsp celery seed
- 1 tsp salt (divided)
- 1/4 tsp pepper
DIRECTIONS
- Boil potatoes in water with half of the salt. Drain, and reserve potato water.
- Fry bacon until crisp. Remove bacon from grease and set aside.
- Add onion to bacon fat and saute until transparent. Stir in flour, celery seed and stir to combine. Stir in vinegar, sugar, and 1/2 cup of the reserved potato water and salt & pepper.
- Combine cooked potatoes, bacon and onion mixture.
- Serve warm. Can also serve cold.
