Watermelon Agua Fresca
  • Servings: 4
  • Preparation Time: 5 min + cooling (optional)
  • 1/2 cup sugar
  • 6 cups 1-inch dice watermelon (you can take the seeds out it you want)
  • Zest and juice of 2 limes
  • Lime wheels, for garnish
  1. Add the sugar and 1/2 cup water to a small saucepan. Stir and bring to a simmer over medium heat until the sugar is melted, then turn off the heat and let cool.
  2. Add the watermelon, lime zest and juice and 3 tablespoons of the cooled simple syrup to a blender. Blend until smooth. Pour into 4 small glasses.
  3. Garnish each with a wheel of lime. You can add ice to each glass if you want.
  4. NOTE: If you left the seeds in, you can use a sieve to strain your juice if you want- I usually don't bother unless serving young kids.

Aguas frescas (Spanish for "cool waters", or literally "fresh waters") are light non-alcoholic beverages made from one or more fruits & fruiting veggies (ex: watermelon, cucumbers, etc.), cereals, flowers, or seeds blended with sugar and water. You can definitely cut on sugar, I just shared the original recipe that my former landlady in Mexico would often make! She'd always serve hers with ice... and a bit of chili peppers for an added "zing".
