Watermelon Mint Ice Pops

  • -4 cups seedless watermelon, cut into 1 inch pieces
  • -2 tablespoons sugar
  • -1/4 cup mint leaves, minced
  • -2 teaspoons finely grated lemon zest
  • -pinch of salt
DIRECTIONS
  1. 1) Puree the watermelon with the sugar in a blender until smooth
  2. 2) Mix in the mint, lemon zest, and salt
  3. 3) Pour the mixture into 8 ice-pop molds or 2 standard ice cube trays
  4. 4) Freeze until hard, about 3 hours
  5. (Insert ice pop sticks before ice pops are completely frozen)
