Whipped Butternut Squash
  • Servings: 6
  • 1 butternut squash, halved and cleaned
  • 1/4 cup margarine
  • 1/2 cup fat free sour cream (you can use lowfat or regular if you like)
  • salt and pepper to taste
  1. Preheat oven to 350.
  2. Place butternut squash face down in a baking pan and fill it with enough water to cover the insides. Bake for one hour.
  3. Scoop insides into a bowl and add margarine, sour cream, salt and pepper. Whip until combined.
  4. Serves 4-6.
I found this on Allrecipes and made it last night for a dinner party I hosted. It was SO easy and a big hit!
