Whipped Ginger Cream
INGREDIENTS

  • Preparation Time: 15 minutes
  • 1/2 cup cashews
  • 3/4 cup water
  • 1 Tbsp lemon juice
  • 1 Tbsp chia seeds
  • 1/2 Tsp vanilla extract
  • 1/4 Tsp mesquite powder
  • 4 soft pitted dates
  • 1 inch knob of ginger
DIRECTIONS
  1. Peel the ginger, press is through a garlic press - you use the juice and the pulp.
  2. Place all ingredients in a high speed blender and blend until smooth and creamy.
  3. Store in the fridge for 3-5 days.
