Whipped Shortbread #1
  • 1 lb Soft Margarine
  • 1/2 C Cornstarch
  • 1 C Sifted icing sugar
  • 3 C Flour
  • 1 1/4 tsp Vanilla or almond flavoring.
  1. Cream margarine.
  2. Add icing sugar and cornstarch a
  3. little at a time. Add flour gradually and beat until it until it resembles whipped cream.
  4. Drop by teaspoonfuls onto an ungreased cookie sheet. .
  5. Bake at 325F for 12-20 min, or until light brown on the bottom and golden on the top.
  6. I've also put this in my cookie press, and they come out really good too.
I don't believe I have ever found a cookie more tender than this one!! I love shortbread and when I first saw this recipe I thought it a tad odd!! Well, I was looking for something simple and yet different to try and so today was the day this one got pulled out!! I was pretty surprised and impressed!! Me thinks this one has all sorts of possibilities to play around with some different extracts for different flavors!!
