Whipped Shortbread #2
  • 3 cups butter
  • 1 1/2 cups sifted confectioners sugar
  • 4 1/2 cups flour
  • 1 1/2 cups cornstarch (plus 2 tablespoons for rolling)
  • 1 teaspoon vanilla
  1. Beat butter until very light and fluffy. Gradually add all dry ingredients, mixing until well blended. Dust hands with cornstarch reserved for rolling, and roll dough into 1-inch balls. Place on ungreased cookie sheet, and press lightly with tines of fork. Bake at 300 degrees until cookies are set, but NOT BROWN, about 20 minutes. These are best made a day or two before you plan to serve them.
