White Bean/ Artichoke/ Olive Bruschetta

DIRECTIONS
- Select fresh baguettes from your local bakery. Slice on an angle 1/4" thick slices, set on a cookie sheet. Drizzle with olive oil. Bake in oven at 400 degrees for 8-10 minutes.
- I take canned artichokes, drain and rinse, add 1/4 tsp. chile flakes, and 2-3" pieces of swiss, or goat cheese, depending on your tastes, pulse in food processor. If too chunky, add a bit of olive oil.
- another option: Canned white beans, drain and rinse, add 1/2 to 1 sprig fresh rosemary, add to food processor and pulse. Add some olive oil, pinch salt and/or parmesan, pulse until almost creamy.
- another option: canned olives, 1/2 green and 1 black, add 1 small can of pimentos if desired, put in food processor, add olive oil, and a couple of drops of your favorite hot sauce. You can add a bit of ricotta to make a creamy olive spread.
