White Bean Sauce Over Tortellini

INGREDIENTS
- 1 9-oz package of fresh tortellini
- 1 19-oz can cannelloni beans, drained and rinsed
- 1/2 cup vegetable stock
- 1 Tbsp minced garlic
- 1 Tbsp fresh lemon juice
- salt and freshly ground pepper to taste
- fresh basil for garnish
- 1/2 cup grated parmesan or romano cheese (real or vegan), optional, garnish
DIRECTIONS
- Put the cannelloni beans, vegetable stock, garlic, lemon juice, salt and pepper into a food processor or blender, and puree until smooth.
- Heat in a large saucepan over medium heat until hot.
- Toss with cooked tortellini and serve with optional garnish.
