White Bean Sauce Over Tortellini
  • 1 9-oz package of fresh tortellini
  • 1 19-oz can cannelloni beans, drained and rinsed
  • 1/2 cup vegetable stock
  • 1 Tbsp minced garlic
  • 1 Tbsp fresh lemon juice
  • salt and freshly ground pepper to taste
  • fresh basil for garnish
  • 1/2 cup grated parmesan or romano cheese (real or vegan), optional, garnish
  1. Put the cannelloni beans, vegetable stock, garlic, lemon juice, salt and pepper into a food processor or blender, and puree until smooth.
  2. Heat in a large saucepan over medium heat until hot.
  3. Toss with cooked tortellini and serve with optional garnish.
