White Beans with Ham Hocks

INGREDIENTS
  • 2 tbsp olive oil
  • 1 1/2 c chopped onion
  • 1 c diced celery
  • 1 c diced carrot
  • 1 tbsp chopped fresh thyme
  • 6 garlic cloves, chopped
  • 2 lbs smoked ham hocks
  • 1 lb dried Great Northern beans
  • 2 (26-ounce) containers unsalted chicken stock
  • 1/4 c minced fresh chives
  • 1 tsp freshly ground black pepper
  • Montreal Steak Seasoning, to taste
DIRECTIONS
  1. *Heat a skillet over medium-high heat
  2. *Add oil to pan; swirl to coat
  3. *Add onion and next 4 ingredients (through garlic); cook 10 minutes or until vegetables are tender
  4. *Scrape onion mixture into a 6-quart electric slow cooker
  5. *Add hocks, beans, and stock
  6. *Cover and cook on LOW for 8 hours or overnight
  7. *Remove hocks from pan; cool slightly
  8. * Remove meat from bones; discard fat, skin, and bones
  9. *Chop meat; stir into beans
  10. *Cook 10 minutes to allow flavors to meld
  11. *Sprinkle with chives and black pepper
