White Chocolate Apricot Bars
INGREDIENTS

- ½ cup butter or margarine
- 1 package white chocolate (or vanilla) morsels
- 2 eggs
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon salt
- ½ cup apricot jam
DIRECTIONS
- Preheat oven to 325 degrees.
- Melt the butter in a saucepan. Remove from heat and add 1 cup of the morsels - do not stir!
- In a medium mixing bowl, beat the eggs together with the sugar. Stir in the morsel mixture and vanilla extract.
- In a small mixing bowl, combine the flour and salt. Add this to the egg mixture just until they are combined.
- Spread half of the batter into a greased 9-inch square baking pan.
- Bake at 325 degrees for 15-20 minutes or until golden brown.
- Melt the jam in a small saucepan over low heat. Spread this over the warm crust. Stir remaining morsels into the leftover batter and drop by teaspoonfuls over the jam layer.
- Bake 30-35 minutes longer or until a toothpick inserted near the center comes out clean.
- Cool on a wire rack. Cut into bars.
