White Chocolate Apricot Bars

  • ½ cup butter or margarine
  • 1 package white chocolate (or vanilla) morsels
  • 2 eggs
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ cup apricot jam
DIRECTIONS
  1. Preheat oven to 325 degrees.
  2. Melt the butter in a saucepan. Remove from heat and add 1 cup of the morsels - do not stir!
  3. In a medium mixing bowl, beat the eggs together with the sugar. Stir in the morsel mixture and vanilla extract.
  4. In a small mixing bowl, combine the flour and salt. Add this to the egg mixture just until they are combined.
  5. Spread half of the batter into a greased 9-inch square baking pan.
  6. Bake at 325 degrees for 15-20 minutes or until golden brown.
  7. Melt the jam in a small saucepan over low heat. Spread this over the warm crust. Stir remaining morsels into the leftover batter and drop by teaspoonfuls over the jam layer.
  8. Bake 30-35 minutes longer or until a toothpick inserted near the center comes out clean.
  9. Cool on a wire rack. Cut into bars.
