White Chocolate Mousse

  • 1 c. whipping cream
  • 2 T. sugar
  • 8 oz. cream cheese, softened
  • 8 oz. white chocolate, good quality such as Ghiradelli
  • 1 t. vanilla
  1. Beat whipping cream until beginning to thicken, add sugar and vanilla and beat until peaks form. Set aside. Put white chocolate in a bowl and microwave for 2 minutes at 50% power. Stir, if not fully melted and smooth, continue to microwave in 30 second intervals at 50% power, stirring well each time until fully melted and smooth. Take care, white chocolate overcooks very easily. Meanwhile, beat cream cheese until smooth. Add melted white chocolate into the cream cheese, beat on medium until completely smooth. Gently in whipped cream until just combined. Pour into pretty glasses and chill 2 hours or overnight. Serve with fresh berries.
White chocolate mousse is so elegant served with fresh ripe strawberries. Easy to make, but a wonderful end to a special meal.
