  • Speculoos dough
  • Brune pâte à glacer or tempered chocolate
  • Vanilla marshmallow mixture
DIRECTIONS
  1. Preheat oven to 325ºF. Line a sheet pan with parchment paper.
  2. Roll out homemade or pre-made speculoos dough. Cut the dough into 2-inch rounds. Arrange on the prepared sheet pan leaving about 3/4 inch to 1 inch between them.
  3. Bake in preheated oven for 12-14 minutes.
  4. Place the sheet pan on a cooling rack and let cool for 5 to 10 minutes. Transfer the cookies to the rack to cool completely.
  5. Fill a pastry bag with the vanilla marshmallow mix. Hold the bag vertically 1/4 inch above the center of a cookie and pipe the marshmallow mixture until it covers the speculoos cookie within 1/2 inch from the edge. Immediately pull up on the pastry bag to form a cone. You will use between 5-10 grams of marshmallow mixture per cookie. Repeat with the remaining cookies.
  6. Spoon the pâte à glacer or tempered chocolate over each hat to coat and cover the marshmallow and cookie completely. Cool at room temperature until the chocolate sets.
