Wonderful Waffles

INGREDIENTS
- Servings: 3 waffles
- 1 c all-purpose flour
- 2 t baking powder
- 1 t sugar
- 1/4 t salt
- 1 c milk
- 1/4 c margarine or butter, melted
- 1 egg, separated
- (We often double the recipe)
DIRECTIONS
- Heat the waffle iron.
- Mix flour, baking powder, sugar and salt in a medium bowl.
- Stir in milk, margarine and egg yolk until blended.
- Beat egg white in a small bowl on high speed until stiff peaks form; fold flour mixture into egg white.
- Pour about 2/3 c of the batter onto the center of hot waffle iron. Bake until steaming stops. Remove waffle carefully. Repeat with remaining batter.
