YUMMY CARROT CAKE

INGREDIENTS
  • 3 cups flour;
  • 2 cups sugar;
  • 1 tsp. soda;
  • 1 tsp. salt;
  • 1/3 cup cinnamon;
  • 1-1/2 cups oil;
  • 2 tsp. vanilla;
  • 2 cups grated raw carrots;
  • 1-1/2 cup chopped pecans;
  • 1 large can crushed pineapple (drain)
  • 3 eggs
DIRECTIONS
  1. Sift flour, sugar, soda, salt and cinnamon together; mix well.
  2. Add oil to dry ingredients. Beat well.
  3. Add vanilla, carrots, pineapple and eggs, beat until well mixed.
  4. Stir in pecans.
  5. Bake in a large rectangle pan at 350% for 45 minutes to 1 hour.
  6. Top with cream cheese frosting.
