Yellow Squash Medley
INGREDIENTS
  • 1 onion sliced
  • 1/2 red bell pepper sliced julienne style
  • 2 oz. butter
  • 4 yellow squash cut into wedges
  • salt and pepper to taste
  • bunch of parsley chopped
DIRECTIONS
  1. In pan saute onions and bell pepper with butter.
  2. Add yellow squash, salt and pepper to taste and continue to saute for about 3 minutes or until tender.
  3. Add parsley.
RECIPE BACKSTORY
You can substitute olive oil instead of butter for vegan.
