Yogurt Cake
  • 1 white or french vanilla cake mix
  • 1/3c oil
  • 1/3c water
  • 3 egg whites (egg yolks will discolor cake)
  • 2 6oz cartons of vanilla yogurt
  1. Mix, and bake at 350 for 22-30 minutes. Cool on wire rack for 10 mins, and then remove from pan. Allow cakes to cool completely on wire rack before frosting.
This is one of my most requested cakes, even though it starts with a mix. It gives you a nice, fluffy, versatile cake thats so moist it almost melts in your mouth. Its fantastic with whipped cream, vanilla buttercream, or with a just a fruit compote. It can be used with ANY flavor of yogurt, meaning you can make it a strawberry mango cake (delicious!!), or alternately make it with sour cream and add a little almond extract and make it a sour cream almond cake (to die for!). For now I'll start with the basic vanilla.
