Yummy Apple Raisin Loaf

  • 1/2 C. apple juice or cider
  • 1/2 C. raisins
  • 1 C. brown sugar
  • 1 T. melted coconut oil
  • 1/2 Tsp. nutmeg
  • 1/2 Tsp. cinnamon
  • 1 C. applesauce, chunky or smooth
  • 1/2 C. chopped nuts of choice (I prefer walnuts)
  • 2 1/2 C. flour
  • 1 Tsp. baking soda
  • 1 T. baking powder
  • 1 Tsp. salt
  • Optional-approx. 2 T. of Sugar In The Raw natural cane turbinado sugar
  1. Preheat oven to 450 and coat loaf pan with non stick cooking spray
  2. Combine apple juice, applesauce, nuts, raisins, sugar, spice and coconut oil in a medium bowl
  3. In a separate, larger bowl, whisk all dry ingredients until combined, then pour in your wet ingredients and stir.
  4. Add in nuts and stir until just combined, then pour into your prepared loaf pan
  5. Sprinkle the top with turbinado sugar crystals for crunch if you are feeling fancy today
  6. Pop into the preheated oven and immediately turn down to 350
  7. Bake for 45 min to 1 hour. Test for doneness by inserting toothpick in center of loaf. If it comes out clean, pronounce "is done" and smile! You've just made homemade bread!
  8. Let cool and wrap in tin foil. Leave on the counter next to your keys so it isn't forgotten in your rush to Divine Liturgy next morning.
