Yummy Bruschetta

INGREDIENTS
- 1 3/4 lbs. ripe italian tomatos (about 12 to 14)
- 2 Tbs minced fresh garlic
- 2 Tbs minced shallots
- 10-12 fresh basil leaves (coarsely chopped)
- 1 tsp fresh lemon juice
- salt and pepper to taste
- 1/3 cup extra virgin olive oil
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, slivered
- Crusty French bread, sliced
DIRECTIONS
- Dice tomatoes and place in bowl.
- Add garlic, shallots, basil, lemon juice, salt, pepper and 1/3 cup EVOO, mix gently and set aside - Let marinate for at least one hour.
- Heat 1/4 cup EVOO in skillet.
- Saute slivered garlic until golden about 2 or 3 minutes.
- Discard garlic and reserve the oil.
- Toast the bread lightly. Bursh with garlic flavored oil.
- Spoon tomato mixture over bread and serve immediately.
- The tomato should be at room temperature
