ZUCCHINI CAKES
INGREDIENTS
- Servings: 4-6
- 2 cups shredded zucchini
- 2 Tbsp. finely minced onion
- 1 Tbsp. mayonnaise
- 3 egg whites
- 4 Tbsp. flour
- 1 tsp. Old Bay seasoning
- 1 cup seasoned bread crumbs
- 1/4 cup bread crumbs for dipping
DIRECTIONS
- Mix zucchini, 1 cup crumbs, onions, egg whites, mayo, flour, and Old Bay together.
- Form patties and dip into the additional 1/4 cup crumbs, patting them in.
- Fry in a bit of butter or canola oil until golden brown.
- Makes about 4-6 patties.
