ZUCCHINI CAKES

INGREDIENTS
  • Servings: 4-6
  • 2 cups shredded zucchini
  • 2 Tbsp. finely minced onion
  • 1 Tbsp. mayonnaise
  • 3 egg whites
  • 4 Tbsp. flour
  • 1 tsp. Old Bay seasoning
  • 1 cup seasoned bread crumbs
  • 1/4 cup bread crumbs for dipping
DIRECTIONS
  1. Mix zucchini, 1 cup crumbs, onions, egg whites, mayo, flour, and Old Bay together.
  2. Form patties and dip into the additional 1/4 cup crumbs, patting them in.
  3. Fry in a bit of butter or canola oil until golden brown.
  4. Makes about 4-6 patties.

RECIPE BACKSTORY
When you have an abundance of zucchini in the garden this is a great way to use them and is not a cake or loaf. Old Bay seasoning gives these cakes their unique taste.
