Zayne Birkenfeld's Blueberry Muffins

  • 2 cups all-purpose flour
  • 3/4 cup + 5 teaspoon of sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • two eggs
  • 1/2 cup vegetable oil
  • one teaspoon grated orange zest
  • 1 cup fresh blueberries
DIRECTIONS
  1. Heat oven to 375°. Coat a standard size muffin pan with nonstick cooking spray.
  2. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. Make a well in the center.
  3. In another small bowl, whisk together milk, eggs, oil, and orange zest. Pour the wet mixture into the well in the flour mixture, then stir until just combined. Fold in the blueberries.
  4. Spoon the batter into the prepared muffin pan. Each muffin cup should be about 3/4 full.
  5. Tip: If you have empty muffin cups in your tin, fill them with water so the muffins bake evenly.
  6. Sprinkle each muffin with 1/2 teaspoon sugar, then Bake muffins at for 23 to 25 minutes, or until crowned and lightly brown.
  7. Remove from pan and cool on a wire rack. Serve warm or at room temperature. Enjoy!
