Zesty Tomato basil Soup

- 5 1/2" slices of stale Italian bread
- 3 tbsp extra virgin olive oil
- 4 garlic cloves diced
- 1 small can Italian plum tomatoes diced and seeded (save juices)
- 4 cups chicken stock
- 1/2 tsp salt and black pepper
- 8 fresh basil leaves
- extra virgin olive oil for drizzling
DIRECTIONS
- Heat the olive oil in pot over medium heat. Add garlic and cook til golden, about 5min
- Add tomatoes and their juices to pot.
- Bring to a boil, stirring occasionally.
- Add stale bread and stock and return to a boil.
- Sprinkle salt and pepper and let simmer.
- After 30 minutes add the basil leaves.
- drizzle olive oil over it.
- Makes 8 servings
