Zucchini, Raisin & Nut Cookies

  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup grated zucchini
  • 1 cup raisins
  • 1/2 cup chopped walnuts
DIRECTIONS
  1. Cream butter and sugars well. Beat in egg.
  2. Mix flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir into creamed mixture.
  3. Mix in zucchini, raisins and nuts.
  4. Drop by tablespoons on greased cookie sheets.
  5. Bake 15 minutes in a 325 degree F. oven. Cool on cookie sheets for a few minutes then remove to a wire rack. Makes about 3 dozen cookies
