Zucchini Bake
  • 4 cups zucchini
  • 2 eggs
  • 1 cup mayonnaise
  • 1 small onion; finely chopped
  • 1/4 cup green pepper; finely chopped
  • 1 cup parmesean cheese
  • shredded cheese
  • bread crumbs
  • salt & pepper to taste
  1. Slice zucchini thin and cook until tender; drain well. In large bowl beat eggs and then stir in remaining of the ingredients. Turn into greased cassorole dish then top with grated cheese of choice, breadcrumbs and dot with butter. Bake at 350-30 min. or until set in middle.
