Zucchini Casserole

  • 2-1/2 pounds zucchini, cut into 1/2-inch cubes
  • 1 cup diced process American cheese
  • 2 tablespoons butter or margarine
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup crushed saltines (about 10 crackers)
DIRECTIONS
  1. 2-1/2 pounds zucchini, cut into 1/2-inch cubes
  2. 1 cup diced process American cheese
  3. 2 tablespoons butter or margarine
  4. 1/2 teaspoon salt
  5. 1/8 teaspoon pepper
  6. 1/3 cup crushed saltines (about 10 crackers)
  7. Place zucchini in a saucepan and cover with water; cook over medium heat until tender, about 8 minutes. Drain well. Add cheese, butter, salt and pepper; stir until the cheese is melted. Transfer to a greased shallow 1-1/2-qt. baking dish. Sprinkle with cracker crumbs. Bake, uncovered, at 400° for 10-15 minutes or until lightly browned. 6 servings
