Zucchini Casserole
INGREDIENTS
- 1 cup biscuit/baking mix
- 1/2 cup Parmesan cheese, grated
- 1 TB dried dill weed
- 1 tsp. salt
- 1/8 tsp. ground black pepper
- 4 eggs, beaten
- 1/2 cup vegetable oil OR extra virgin olive oil
- 3 cups fresh zucchini, shredded
- 1 large onion, finely chopped
