Zucchini Casserole
INGREDIENTS
  • 1 cup biscuit/baking mix
  • 1/2 cup Parmesan cheese, grated
  • 1 TB dried dill weed
  • 1 tsp. salt
  • 1/8 tsp. ground black pepper
  • 4 eggs, beaten
  • 1/2 cup vegetable oil OR extra virgin olive oil
  • 3 cups fresh zucchini, shredded
  • 1 large onion, finely chopped
