Zucchini Cheese Bake

  • 3 tbls butter
  • 1/2 cup chopped scallions
  • 1 cup long grain rice
  • 1/2 tsp salt, divided
  • 1lb zucchini
  • 1 1/4 cup milk
  • 3/4 cup beef boullion
  • 1/2 tsp garlic salt
  • 1/8 tsp pepper
  • 1 1/4 cup shredded cheddar cheese
  • Chopped parsley
DIRECTIONS
  1. Melt butter in medium skillet
  2. Sauté scallions and rice until onionis soft and rice is browned, about 8 minutes
  3. Spoon into shallow greased baking dish with cover
  4. Sprinkle 1/4 tsp salt over mixture
  5. Wash and slice zucchini into 1/4 inch slices, crosswise
  6. In bowl combine milk, boullion, garlic salt, pepper and 1 cup cheese
  7. Arrange zucchini over rice and sprinkle with 1/4 tsp salt
  8. Pour cheese mixture over zucchini
  9. Cover tightly and bake in 350 oven 30 to 35 minutes
  10. Remove cover, sprinkle with remaining cheese
  11. Continue baking about 5 minutes more or until cheese melts
  12. Garnish with parsley and serve
