Zucchini Cheese Bake

- 3 tbls butter
- 1/2 cup chopped scallions
- 1 cup long grain rice
- 1/2 tsp salt, divided
- 1lb zucchini
- 1 1/4 cup milk
- 3/4 cup beef boullion
- 1/2 tsp garlic salt
- 1/8 tsp pepper
- 1 1/4 cup shredded cheddar cheese
- Chopped parsley
DIRECTIONS
- Melt butter in medium skillet
- Sauté scallions and rice until onionis soft and rice is browned, about 8 minutes
- Spoon into shallow greased baking dish with cover
- Sprinkle 1/4 tsp salt over mixture
- Wash and slice zucchini into 1/4 inch slices, crosswise
- In bowl combine milk, boullion, garlic salt, pepper and 1 cup cheese
- Arrange zucchini over rice and sprinkle with 1/4 tsp salt
- Pour cheese mixture over zucchini
- Cover tightly and bake in 350 oven 30 to 35 minutes
- Remove cover, sprinkle with remaining cheese
- Continue baking about 5 minutes more or until cheese melts
- Garnish with parsley and serve
